Tasting Notes

Wine with a deep cherry color. Very aromatic wine in which ripe fruit, balsamic and tobacco notes are noticed with very well integrated aromas of the aging in barrel. The palate is rich and highly structured, expressing a “rusticity” that makes it different mainly in extreme vintages.

Production Features

Organic red wine, made from vineyards grown on terraces towards southeast in a sandy soil. The bunches are hand-picked in order to obtain only the optimum grapes. After destemming and a selection grain by grain in the cellar the maceration and fermentation processes begin, which lasts approximately 20 days. To avoid oxidation and loss of aromas the submerged cap technique is used together with the delestages done by gravity , thus avoiding the use of pumps . The grapes are lightly pressed and then put into French oak barrels where the malolactic fermentation starts. After 12 months of aging, the wine is bottled and aged minimum one year in bottle beforeb eingr ealisedo nt hem arket. Great evolution in bottle. The AA Xtrem is only produced in extreme vintages, when this variety expresses its most “rustic” feature.
