Its nose reveals aromas of slate/mineral, spring flowers, citrus, and melon. On the palate, it has excellent volume, lively acidity, a nervy palate-feel, and excellent balance. It is an ideal match for oysters and clams.
After producing the txakoli with the grapes collected in our vineyards, we make this broth following the Traditional Method, that is, causing a second fermentation in the bottle, where we will have it in Rima for a minimum of 5 years and thus taking out what we could consider as a Gran Reserva and making the order of 1000 bottles per year.
