Wine with a high colour coat: cherry colour with purple hues. Aroma is complex - violet, ripe fruit, balsamic, spice (clove) and tobacco aromas, very well integrated with the notes of vanilla and toast, resulting of the ageing process. Palate is tasty, bulky and well structured, recalling the aromas of ripe fruit, balsamic and spices. Noble and well integrated tannins. Long and complex finish.
Organic red wine made from the Syrah variety. The harvest is carried out manually, selecting the best grapes from our Syrah vines. After the destemming, we pick out each grain, only selecting those that remain intact. The grapes are placed in stainless steel tanks where the maceration is initiated, a process that lasts 30 days during which the alcoholic fermentation takes place. During maceration the submerged cap technique is used to prevent oxidation . During this time we will also perform two daily rack and return action by gravity for maximum extraction. After a light pressure the wine is put into first and second year French oak barrels where the malolactic fermentation takes place. After 14 months of ageing, the wine is bottled and aged for another year before being released on the market. Magnificent evolution in bottle.
